The noodles differ from the silky strands of traditional pho, yet the clear broth with bean sprouts brought back memories of Vietnam. The reddish tint from annatto seeds gave the broth a distinct taste. It also reminded me of Miki Iloko from Northern Luzon. Rich and comforting, the soup felt so inviting that I almost wanted to lift the bowl and slurp directly.
